This book is mainly divided into two sections: 1) Biochemistry; 2) Human Nutrition. First section comprises eight chapters based on metabolism of macronutrients (carbohydrates, proteins and lipids), basics of vitamins, enzymes, hormones and nucleic acids. Second section deals with the digestion & absorption of macronutrients, nutritional requirements of different age groups, analytical methods for qualitative & quantitative determination of nutrients, milk intolerance & hypersensitivity, safety aspects of food additives, toxic elements and radionuclides and various nutritional polices.

Author Biography
Manvesh Kumar Sihag is an Assistant Professor in Dairy Chemistry Department at Mansinhbhai Institute of Dairy and Food Technology (MIDFT), Gujarat, India. MIDFT is an initiative of Dudhsagar Dairy, Mehsana, and is provisionally affiliated with Kamdhenu University Gandhinagar, Gujarat, India. Dr. Sihag is currently working as Head, Dairy Chemistry Department since 2016 for the faculty of Dairy Science in Kamdhenu University. He ob- tained his Doctorate in Dairy Chemistry from National Dairy Research Institute (NDRI), Karnal, India and Masters in Food Technology from Guru Jambheshwar University of Science & Technology, Hisar, India. His re- search interest lies in exploitation and processing of underutilized cereals & le- gumes and their utilization in the development of value added/ functional foods. He is the author of more than 16 peer-reviewed journal articles, one book and five book chapters published in journals of repute. Dr. Goyal acquired Bachelor degree in Medical Sciences from Kurukshetra University (2008) and Maters in Food Science and Technology (2010) from Chaudhary Charan Singh Haryana Agricultural University (CCSHAU), Hisar, India. He holds Doctorate in Dairy Chemistry (2014) from National Dairy Research Institute, Karnal, India. Dr. Goyal’s research interests include development, formulation and validation of functional foods, nutraceuticals and value-added products. He is the author of more than thirty research and review articles published in peer-reviewed journals. He has also supervised two post-graduate students during their Master’s degree program. She obtained B. Tech degree in Dairy Technology from College of Dairy & Food Science Technology (CDFST), Maharana Pratap University of Agriculture & Technology (MPUAT), Udaipur (Rajasthan) in the year 2009. She completed her Masters in Dairy Chemistry from National Dairy Research Institute (NDRI), Karnal, India in 2011. She has published research and review articles in several national and international journals. Beenu Tanwar is an Assistant Professor in the Department of Dairy Technology, Mansinhbhai Institute of Dairy and Food Technology, Gujarat, India. Dr. Tanwar acquired Master’s degree in Food Technology in 2009 and Doctoral degree in Food Technology and Nutrition (2013). She is a researcher and author, having published numerous peer- reviewed articles in the fields of Food Science Technology and Nutrition. She received Junior Research Fellowship Award from University Grants Commission (UGC), New Delhi, India for her Doctoral degree program. She has attended subject-specific skill-orientated courses, training sessions, seminars, conferences, and workshops; and has received several best poster paper awards in scientific events. She has supervised nine students for their Masters’ and five scholars for their Doctorate degree in the subject of Food Technology and Nutrition. Dr. Sandhu worked as Post-Doctoral Fellow (2014- 2018) at International Rice Research Institute (IRRI), Philippines. She has been awarded Monsanto Beachell Borlaug International Scholarship for conducting Ph.D. Research. She acquired her Doctorate and Master’s degree from Haryana Agricultural University, Hisar in Molecular Biology and Biotechnology. She is trained on water saving technology and breeding aspect at IRRI and physiological aspects at CIRAD France under Monsanto Beachell Borlaug International Scholarship. Dr. Sandhu has also been invited for World Food Prize ceremony and Leadership course held at USA. She is an awardee of DST Junior Research Fellowship. She has qualified CSIR-UGC NET, ASRB NET and GATE Examination. She is the author of more than 16 research and review articles published in peer-reviewed international journals with cumulative impact factor of 45.
