        Mycotoxins & their Implications in Food Safety

        Mycotoxins pose an enduring problem in the area of food safety, and this timely work provides a valuable resource for all of those that recognize mycotoxin surveillance as a world health imperative. These six chapters describe the impact of the main mycotoxins that present food safety challenges in the farm-to-fork food continuum. It comprises a focused review of aflatoxins, ochratoxin A, fumonisins, zearalenone and emerging mycotoxins, such as beauvericin and enniatins. Each mycotoxin is addressed in an individual chapter, authored by skilled researchers in the field, with a summary of their fungal producers and physical-chemical nature, and a survey of occurrence in different foodstuffs and different regions. The book also summarizes and explains the main aspects of the analytical methodology for sample extraction, purification and determination. Finally, each chapter reviews the health impact that exposure to each mycotoxin embodies for humans, covering all the main toxicological features.

        Progress in Nanomaterials for Food Packaging

        Food packaging has developed greatly over recent years, mainly due to the increased demands on product safety, shelf-life extension, cost efficiency, environmental issues and consumer convenience. In order to meet such varied demands of consumers, manufacturers and society, various innovative packaging systems, such as active and intelligent packaging systems, are emerging. Active packaging is able to modify the condition of the packaged food without provoking any substantial variation in its quality and nutritional value, while improving its shelf life and, ultimately, its safety. Intelligent packaging is meant to monitor features of the packed food to provide an indication of the quality status of the packaged product during storage and handling. Such innovative packaging systems are possible with the aid of newly developed packaging materials, with improved packaging performance. This book covers selected topics and technologies in the food packaging sector, as well as innovative new packaging materials and their properties.
