Author Biography
Joan Roca Fontané (Girona, 1964) began his career alongside his parents and grandparents in their family restaurant focusing on Catalan cuisine while studying at the Girona’s Hospitality School, where he has also given classes and maintains a close relationship. Today he and his brothers Josep, the sommelier, and Jordi, the pastry chef, run El Celler de Can Roca, currently considered the finest restaurant in the world. His cuisine harmonizes Catalan culinary traditions with avant-garde techniques and is the result of constant research, innovation, and creativity.
